How to Give a Tea
We are currently writing a class on how to give a tea. We are hoping to give the first one in March or April of 2008.
Server Training Classes
Classes are held every six months: usually once in
January and once in June.

Please do not sign up if you have to leave early, will arrive late, or have some other problem in attending the entire class.
The cost of the class is $40 per person. This includes the instruction book, a sandwich lunch, and training materials. You are expected to wear loose, comfortable clothing. You will be doing dishes, making sandwiches, kneeling, sitting, and stretching, so dress comfortably. If you sign up for the class, you must cancel your RSVP at least 48 hours in advance of the class, or you will still be expected to pay for the class. Many of the items used in the class are perishable, and so cannot be "used at another class." Please be understanding of this. No one will be allowed to leave until ALL THE DISHES ARE DONE AND THE KITCHEN IS CLEAN. We are borrowing other people's houses for these events. Everyone needs to pitch in and clean as you go. Believe me, you won't be remembered fondly if Mikey, Atheris and I have to finish your clean up.
We take our training very seriously. Please pay attention.
One of the most disappointing things that happens is that the servers figure that they don't really have to follow all the rules at a real tea. Then we have things happening like food trays getting empty and picked over looking, no garnishes, or just parsley, sloppy sandwiches, servers bending instead of kneeling, tea not being made with boiling water, etc. All of the things we teach are important. The point of the entire day is to make the ladies feel cherished and lapped in luxury. For ladies, the LOOK of the food is nearly as important as the taste. So please pay attention to what we teach.
It is also important that all the serving trays, etc. are cleaned up by the time the servers depart. It's very rude not to clean up the kitchen of the hostess, and will make her think twice about having another tea. Please make sure that things are cleaned up both at the end of the class, and at the end of the tea.
